Apples in France

I think I may have missed the answer to the question - "what are the best apples to buy in the market in France for apple pie?"

All the dessert apples available here are nice, but not for pie. Does anyone in France know which variety is best?

Apples in France

Hi, I like the brown skinned Canadian for cooking, especially with pork. My bramley apple is yet to provide with with sufficient fruit; weather not great last year. However, my French tutor much prefers to use an apple she calls 'the Golden' but I don't think it is the golden delicious, for puddings. Half of my French lesson the other week was about cooking a tarte tatin.
