Cooking gammon in advance

Can someone tell me how much in advance I can cook a gammon. Ideally would like to cook it on Saturday to have on Christmas day.

That's absolutely fine. If anything, its better to cook it in advance, it seems to benefit from the delay in eating. I'd wrap it well once cooled to stop it drying out but it will be perfectly safe.

I've heard twice recently about how long you can keep cooked gammon.

I prefer mine boiled with bay leaves, good pinch of demerara and crushed black pepper corns. Then I let it go cold in the water so that some of the jelly creeps back into the joint.

It will keep for up to 5 days in the fridge.

I used to know a food scientist to whom I asked the same question. He went away and did some science stuff and came back with 'up to 5 days'. That's good enough for me.
