Cooking this weekend

Very excited - off to stay at NT cottage this weekend with five other foodie adults and four juniors. Cooking all planned. I am starting things off on Friday with goats cheese souffle with a beetroot puree, lamb boulangere with a salad of pea, mint and feta and then Delia's fallen choc souffle with armagnac prunes. On Saturday there is a Thai seafood extravaganza planned, followed by pineapple in a tamarind syrup, then on Sunday slow roast pork with apple crumble. Adults will eat alone on Friday and Saturday and then we will all eat together on Sunday for what could be seen as a very late lunch or a very early dinner.

Can't wait! And always makes me keener to be a bit more ambitious when I know others will be picking up the baton over the rest of the weekend.

Ooh, that sounds divine! Methinks our menu will be courtesy of M&S 'two can dine for a tenner' as we're busy on Saturday then on Sunday we're taking our 2 yr old g'son for the Santa Express train ride at Bolton Abbey near Skipton so taking the easy route!

Cooking this weekend

I love the idea of renting somewhere for a foodie weekend! Must work on that...

This weekend, I'm at my Dad's in the UK, seeing him off to Florida for a month, so will be here alone after Saturday morning. I'm planning a couple of feasts for myself - Saturday night will be seared scallops with bacon, soy sauce, lime juice, garlic and chili, plus salad, and then I have a big chunk of pork belly for Sunday, plus Brussels sprouts, baby courgettes and green beans with butter (still low carbing!).

Tonight, we're having a proper Salade Nicoise (minus spuds), and tomorrow it's my low carb moussaka (very much like a normal moussaka, but with just eggs, cream and cheese in the topping).
