Sage pesto

I was given a little jar of fresh sage pesto and it needs to used - any ideas? I was thinking about pan frying some pork or chicken and makeing a sauce with the pesto and a little creme fraiche. I am worried it will be very strong flavoured, a little sage goes a long way in my opinion

a while back on this morning, gino d campo made a pork dish using sage pesto - but he made the pesto like pork kievs.(it is googleable). I would see no reason why you couldn't use ready made.

I agree that with sage a little goes a long way.

another use, could be to stir a teaspoon through mashed potato. or added to a stuffing mixture. or added to a bread dough. a little stirred though pasta, for a simple tomato and pasta dish.

you can freeze sage pesto, just like you can basil pesto. in an ice cube tray.

Hi Sam

thanks for the tip on freezing - forgot I could do that. used half the jar last night, sort of in the way I had originally planned, but with sausages, fried with onions and mushrooms, and then stirring in the pesto and a good dollop of creme fraiche right at the end - served with mash, very nice.
