Cooking this week

What is everyone up to in the kitchen this week - any plans?

JAMES

Cooking this week.

My plans only go as far as tonight, Noreen!

Delia's soufleed macaroni cheese is planned.

I've actually come to the site to check the recipe and to make sure I have everything in. Waiting in for a parcel, no idea what time it will be here, so ideally, I will have everything already, but need to check!

I'm sure I will be able to pop to Waitrose later if need be as we eat 7.30-8-ish but if I do have everything, even better........

It's a lovely dish, for anyone who likes macaroni cheese and has not tried it, do give it a go.

Cooking this week

Maccaroni cheese (but made with rigatoni) with spinach tonight. Tomorrow is home made soup, Wednesday is Delia's chicken with lime and mango salsa, Thursday spaghetti and meatballs if the girls are in but spaghetti and roasted veg for me if they're working and Friday we're out for a curry with Mum and Dad.

Cooking this week

I'm clearing the freezer to have space for Christmas.
All totally boring I'm afraid - meatballs, pasta sauces, casseroles, soups and various things I have tried to identify but not a clue.
This could get messy I feel.

Yes I am in freezer emptying mode at the moment as well - it is remarkably satisfying! Making a spicy lamb and aubergine stew tonight with cold left over lamb from yesterday. Probably something prawny on Friday as we try to observe the no meat on Friday rule (Catholic) but I do like the sound of the soufleed macaroni cheese and have never tried it. Might be good for a change.

Cooking this week

Leftovers from yesterday ... and I have a cold so I can't taste anything anyway.

Re Sandra's post & weird things in freezer that could be anything - when I was quite small I played 'shops' in Grandma's larder ... and removed every single label off all her tins & muddled them up. She & my Grandad had fruit salad/tomato soup/garden peas lottery for weeks!

This week's cooking

After a very expensive and stressful few weeks that includes new computer & modem, clutch for the car plus two days car hire, taking in a young abandoned dog, who no matter how many times was taken to where she was found, made her way back to our house and despite notices put around the village remained unclaimed. So we've had her sterilised and microchipped. At the weekend the printer stopped working, the circuit board on the wood-burnng stove stopped working and the water heater started to leak, so have had no hot water nor heating and I am reduced to boiling pans of water to wash up. So I consider ourselves lucky to be eating! Tonight we are having homemade battered fish and chips, tomorrow pizza, then chicken curry as I'm trying to do one-pot cookery until things sorted.

Eek, Wendy, that sounds like an awful week - glad you're still smiling though!

Right now, I'm at Dad's in the UK, though flying back to Ireland for a week tomorrow. Tonight, I'm doing a chicken, pepper and mushroom curry (thigh meat) for Dad and me - using up the remaining fresh food before I leave Dad with pies and things for the next week. Tomorrow I'm not sure, will probably go for something simple like bacon and eggs, as everything will be frozen when I get home. There's loads of salmon in the freezer, so am thinking of poached salmon salad one night, pan-fried salmon with Hollandaise sauce another night. I think we have some stir-fry beef in there too, so that's another night sorted. I'm planning on getting Carl to take me out for lunch one day (more pork belly!), and will probably get a lump of meat to roast at the weekend. Then on the 28th I'm back to the UK and the land of Tesco's delivery :) I finally get to go home (Ireland)for Christmas on Dec 5th, so will be able to plan ahead a bit more then!

Still low carbing (today is Day 106!) so all meals reflect that.

Cooking this week

Oh dear Wendy, that sounds awful. I hope things pick up for you from now on.
I am hoping my cooking mojo is slowly coming back after some months of stress. Tonight is beef curry. Tomorrow is chicken cacciatoria. I have to make my Christmas cake which is usually one of Delia's from her first Christmas book - Dundee cake. I want to play around with some light desserts for Christmas lunch this year so will try some from Delia's new Happy Christmas book and a few posset recipes from Nigel Slater. The tasting should be fun.

Water heater fixed

Hi Dark Ginger & Chillie, just to let you know we've got a new water heater so got hot water. Whoopee! Still no heating though, might mean sending to the mainland for a new circuit board. Grrr. Defintely need new printer but that will have to wait a bit until the more important things are sorted!

Still smiling Wendy

"What is everyone up to in the kitchen this week - any plans?"

Yesterday I cooked a Boeuf Bourguignon (or as hubby calls it, Beef Been-n-Gone)and it was delish, cooked in my slow cooker. Had been marinating in wine and brandy for 24 hours. Enough for 2 more meals each and safely tucked away in the freezer. Coming back down to earth, tonight we'll have omelette and chips.
