Hi, I am going to make the above for New Year's Eve party we are hosting, how far in advance can I make the choice pastry?

I know not to fill them too early, just wondering if I can get ahead with the buns?

At a French wedding the cake looked wonderful but tasted sour! Think the filling had gone off in the heat, yuk! Good luck!
