I've just put all my ingredients in a large bowl to sit overnight. However I stupidly put in the brandy too instead of leaving it to the end of cooking. I think this was because I've just finished making 11 Christmas Cakes and automatically poured the brandy over the fruit!Will it be ok? Any advice?
It will be fine. Only thing is the alcohol will evaporate when you cook the mincemeat. Any excuse for getting the brandy bottle out again.
Don't worry about soaking the fruit in brandy overnight. Just top it all up when it goes into jars and Thistledo will be over Christmas Eve to test it!
