I made unusual ones last year and they went down a treat. They were a recipe by The Scotsman's Claire McDonald. They were very light and about half of the fruit was replaced by grated carrot. Easy to find the recipe.

Help please... I have made Delia's Xmas pud mixture,, only to break my pudding basin before mixture was added! How long can I leave the mixture in fridge before cooking?
