Piccalilli in a pickle!

Hello all, I thought I'd attempt piccalli this year and followed Delia's recipe. Unfortunately I haven't quite got used to the electric hob in my new house and the 'gentle boil' phase turned into a very furious boil - now the piccalilli seems to have separated a bit in the jars, and I was wondering if anybody knows whether it will be alright if I just let it mature for a few weeks, or whether I should scrap the whole batch and start again? Thank you so much in advance for any advice!
