Polenta

How do you use Polenta ??

I have 2 kilos of the stuff, apart from using it in a chili cornbread i never use it for any thing else

Polenta chips are nice!

Or just make it without setting it, good grating of nutmet, nice side dish.

I like to make up polenta and then pour it into a tin and let it set. When it's cold I cut it into squares/rectangles and fry it in olive oil until slightly browned. Then I pour a tomato/vegetable sauce over it - like a pasta sauce with veggies added. (No special recipe!!)
When I cook the polenta I use a stock and add some grated cheese when it is thick and almost ready set.
The squares of set polenta freeze well for another, quick meal.

Last time I cooked with polenta I did a bake with spinach, mushrooms and soft polenta. I adapted a recipe from a magazine - I could post it for you if you're interested.

Hi Sue,

I do it just like Sonya. Make the stuff up using stock, pour into a lined tray, fridge it to set, then cut into chips and fry.

I hate frying stuff, so now I put them in a bowl with a good glug of oil and put them on a lined baking tray. Same result. A good grating of paremsan when they are on the plate is really yummy.......

There is also a Delia recipe on here using polenta.

grilled as a slice with cheese and parma ham on top. Also pretty yummy.

i will give them a try tonight, also going to try a Polenta Lemon Cake.
