Overnight beach camping suggestions?

Somehow, I've been talked into doing the cooking on an overnight beach camping outing next weekend (or some other time, depending on weather) - the sky's not getting dark here now until around 11pm, so the idea is to take the dogs, our friends' dogs, us, the friends, their partners, everyone's fishing rods, and a few disposable barbecues, plus tents, and have a night of drinking and fishing and cooking and eating on the beach, followed by a hearty breakfast the following morning, and lots and lots of photography :)

Sounds great, no? I'm sure it will be, weather permitting - but I'm not really sure what to cook for the evening meal. It's more or less a foregone conclusion that no fish will be caught - but I still have to allow for the possibility that they ARE, and those who catch them will expect me to do something creative with them!

Any thoughts on this?

Sounds great! Thinking back to my own camp cooking days, I'd definitely keep it simple so how about BBQing Delia's Lemon Chicken Kebabs. Any caught fish I'd just wrap in foil with some chopped peppers/onion/dill/squeeze of lemon or such like and serve with a big bowl of interesting rice, salad and some garlic bread. For dessert I'd have various fresh fruit pieces to dip in chocolate fudge (but you can decant that from the Betty Crocker tub so the other friends needn't know it's a cheat)! Lots of vino to wash it all down - - - ooh, such fun!

oh doesn't that simply sound wonderful - well it does to me.

can't help on fish advice - but what elpe has suggested sounds good to me.

all i can sort of think of is - lots of strong lidded tupperware containing marinating chicken wings/drumstick/thighs, in various types of marinades from spicey to herby - then maybe the similar with sausages - the empty tupperware can then store the bones once eaten.

you could also have cubed chicken breasts in some type of marinade - threaded onto skewers when your ready to assemble and cook.

plenty of wet wipes/anti bac hand/hospital hand wash stuff too! and a couple of rolls of kitchen paper.

Blankets, don't forget it may get quite chilly. But all sounds really delish....and extremely exciting. Hope the weather is kind to you all, have a FAB time x

Due to weather and our mate putting his back out, we still haven't done this - but we WILL just as soon as a weekend coincides with a lack of precipitation:) Looking at the forecast, that could be this Saturday! If it isn't, it's likely to be after my return from the UK (away 24th - 1st August), which will suit me better 'cos I'm off the booze until then!

I'm really looking forward to it - nothing nicer than lying in a tent, in the warm (ish), listening to waves crashing on to the beach.
