Can anyone please help with a baking question

I know its been an age since I've been on here but I have been asked a baking question I cannot answer - its 'cos I'm a cupcake girl I guess :)

My aunt is baking her daughter's wedding cake and two of the tiers are going to be 10 and 8 inch square Madeira cake.

Also, how late can it be baked before icing before the wedding on 18th August (poss without freezing Madeira cake first)?

Cupcake, I don't have experience of doing this and so wouldn't like to say. But do you remember Rita? She was our expert in such things? Well, she has had a business in Malta decorating cakes. They are absolutely amazing. If you go to her profile she has information about sponge cakes for a wedding and also how you can scale up a recipe to the size you want. Not sure if she says how long they keep. You will also see her flickr account, a Matter of Taste, is in her profile and you will see some of her incredible cakes. If you can't find it from here... then just put the link below in Google and it finds it.

Thank you so much Honey. I'll take a look. I rarely bake anything but cupcakes or scones. Maybe the odd carrot or chocolate cake so I haven't a clue. :) xx
