Delia Summer Recipes

Well with the gorgeous weather at the moment, my thoughts inevitably turn to my favourite Delia recipes, I think the Summer Collection is my most used book.

I particularly love the Piedmont Peppers and the Roasted Tomatoes and the wonderful salmon recipes too, so many to choose from.

What is your fave Delia Summer recipe?

Mmm - Grilled Lemon Chicken Kebabs served with mushroon fried rice and various salads plus some lovely bread to mop up the juices and dressing. Yummy!

Delia Summer Recipes

Delia's Roasted Mediterranean vegetable salad with couscous and harissa style dressing has to be my most fave. But I also love the Piedmont peppers and I'm a big fan of her salmon with avocado creme fraiche, which always feels like a summer recipe to me.

Delia's Summer Fruit Terrine

Was thinking of trying to make it with red, white and blue fruits in layers for the Jubillee weekend. I'm not much good at fussy things so would it work?

It's predominantly red when it is made, so you could make sure you only put red berries in it, and also make this

but make a blueberry coulis instead of the raspberry and blackberry one. Then serve a slice of each terrine, to make your red and white, then the coulis for your blue.

Both of the terrines are made in advance and are really, really easy.

Delia Summer Recipes

Last summer, on one of the rare occasions it was nice enough, we had a 'pot luck' meal, inviting some friends over, each of us cooking or bringing a course, and we ate it on the patio in the garden.
I did the Baked Lamb with rosemary, with redcurrant and mint sauce, and the friends all brought different dishes. There was Savoury feta cheesecake, Hot and sour pickled prawns, Pesto rice salad and Peach wine jellies with peach puree.
It was a wonderful meal and it wasn't until we were near the end of it that we realised we had all cooked or brought a 'Delia' recipe!!
How spooky is that!
