Cooking Weekend

Hey Guys

Oh Foodie, will be interesting to see if you get any idea's for your duck!

Raining here in Dublin today :( So for dinner tonight, I think comfort food is in order! So Roast Chicken, Mashed Potato with Spinach & some nice roasted pepper, onions, garlic & beetroot, not forgetting a nice glass of something White & Chilled!

Happy Cooking

What's cooking?

No rain over in Mayo yet today (which is a miracle in itself). Tonight will be shepherd's pie, 'cos there's some non-frozen mince in the fridge. I'll do my comfort food version, which includes mushrooms, is topped with cheese, and served with baked beans :) If I remember to get the chicken out, tomorrow it'll be chicken curry - possibly the first korma I've ever cooked, 'cos the husband has asked for something 'not very spicy', and then a roast lump of something on Sunday - had lamb last week so it'll probably be beef.

What's Cooking?

Just about to make a picnic for my daughter and I to take to Glyndebourne later this afternoon. Tomorrow is my husband's birthday so we'll eat out somewhere and then on Sunday our daughter is cooking dinner for a birthday treat for her father. Not much for me to do this weekend!

What's cooking?

Glyndbourne! How lovely, I've always wanted to go.

Re food this weekend, i am a bit grumpy with OH at the moment and that is affecting my decisions about what to cook to night as I don't think he deserves any treats! I have 2 girlfriends over for dinner tomorrow night and am going to make a chicken and aubergine Thai red curry and some sort of nice pud. Out for lunch on Sunday so nothing to do then! And I must fit in some exercise - all I have done for the last week is eat and drink to excess and feeling a bit porky.

What's cooking

Hubby is away at a stag weekend and the girls are both going to be staying with their B/F's. I never feel like cooking for myself. Hubby doesn't like the M&S meal deals so I have treated myself to the meal for two which I'll have tonight and tomorrow. Chicken with parmesan and pancetta, parmetier potatoes, toffee honeycomb traybake. Corn on the cob and mange tout as well.

I was meant to be going out for a meal tomorrow, but now it's just drinkies.

Sunday I'll cook a roast chicken for my lord and master's return.

What's cooking?

tonight is braised pork chops - i usually go on strike on Fridays but am doing the decent thing tonight. Hubs has had a stressful week and it's a bit cold and yuk today so comfort food is needed

not sure about the rest of the weekend - hope to squeeze a bbq in as it's supposed to get nicer and is a long weekend here

Whats cooking...

well for tonight - I have made a recipe that I saw on this morning the other day - frst time i seen that show in absolute yonks - but was a bit laid up and thought it looked delicious - its the spring chicken and vegetable (stew)broth (which can be blitzed up and made into a proper chickeny soup.

Tomorrow will be a bit of a cook a long day as the weather is again due to be rotten, I am planing on making a lasagna and a cottage pie (both using quorn mince) and for sunday - will be roast something or other, have a nice turkey breast or chicken or leg of lamb nestled in the freezer - desicion time tomorrow - saturday.

Oh and sunday I shall be baking my Herman, still keeping him alive and bubbly - the cupboard he is in - smells like a brewery.

Tea was ...also cottage pie!

Great minds. Cos it was raining & I wanted something hot & so we could eat in shifts (I do a Brownie group on a Fri night & daughter assists, we go out as OH arrives home at 6, & son goes climbing & comes in at 8pm) I also did cottage pie with carrots, celery & petit pois in it, with cheesy mash on top & served with baby corn & flat beans. And there's loads left, so we'll have it again tomorrow.

Duck sounds good for Sunday now I've read about it! I have a Gressingham in the freezer ... and I haven't had a proper rice pud for years....

What's cooking?

A tray baked chicken breast dish with lemony oregano roast potatoes and local spring asparagus is on the menu for tonight.

Tomorrow I shall make sliders and serve on mini buns accompanied by jacket potatoes with sour cream, and likely a caesar salad.

For Sunday I have splurged on a free range organic chicken which will be roasted with all the traditional accompaniments (for us that means roasties, braised celery, vichy carrots and steamed brussel sprouts plus gravy and Delia's bread sauce.)

What's cooking?

All sounds pretty wonderful to me. Have decided on the duck...its gonna be soy roast with hoisin gravy and with it will be stir fried rice with cabbage & bacon. I've done it a few times before and we love it. Its on the bbc good food website. I can highly recommend it.
