Thank you Sam

I cooked your chicken breast, sausage meat, apricot, bacon loaf yesterday. Not done it for quite a while and was getting repeated requests from Steve and the girls. This always goes down an absolute treat....... mmmmmmmmm delicious.

Sausage/chicken/bacon/apricot loaf for Dottie May

Dottie, I won't give exact quantities - I vary the size of loaf tin I use depending on how many I'm cooking this for; I'm sure you'll be able to adapt it easily to suit.

Line a loaf tin with streaky bacon (I used back as I prefer it less fatty). Put a layer of sausage meat in the bottom of the tin, chop up about 8 dried apricots and pop in a couple of chicken breasts, add more chopped apricots, another layer of sausage meat and then wrap the bacon over the top. Cook at 180 for 35-40 minutes. When cooked I tip mine up to drain off any excess fat and then slice into portions.

Using 1lb sausage meat, a pack of bacon and 2 chicken breasts served 5 generous portions on Wednesday evening. With it we had, new pots, broccoli, sugar snaps and petis pois. Cranberry sauce is a nice accompaniament.
