Lemon Ricotta Cheesecake

I made this Delia recipe yesterday and it was a disaster! I was a bit surprised that the biscuit bake needed 20 minutes in the oven - when I checked at 15 minutes it was already getting quite burnt. Then I made the filling, following the recipe to the letter but it turned out very runny and watery. I gamely pressed on and left in the fridge but 4 hours later it was still not set - tried sticking in the freezer but after and hour gave up in vain! What a shame, it was such a disappointment and usually Delia's recipes are bang on. Is it just me, or has anyone else had problems with this?



I made this once, but years ago. Don't recall any problems but I do have to agree that 20 mins for the base does seem long.

Hi, i have made this loads of times and never a problem.

Pour your biscuit base, maybe your oven gets to hot and this is why it was over cook. My last oven cooked perfect, this oven i have to keep checking as it gets to hot.

Runny cheesecakes, maybe your lemons had lots of juice?
did you use the right amount of gelatine, i have used both powder & sheets.
