Your favourite way to use smoked salmon is....?

I have some smoked salmon slices left over from brunch on Sunday (with scrambled egg). Yummy! The last few slices need to be used up today.

Not very exciting, maybe, but I like mine on soda bread, spread with cream cheese, topped with the salmon, and a few capers sprinkled over.

I love smoked salmon and I love cream cheese, but hate them together, it's a texture thing.

Foreman's SS is my favourite, plenty of lemon, black pepper and a few capers for me.

Nothing fancy, just granary bread (crusts removed), butter, black pepper and lemon juice.

Ways to use smoked salmon?

Ooooh...smoked salmon with cream cheese...those sound yummy too.

I think I need more left-over smoked salmon!

I would have eaten it !

Should we ever have a little left over I whizz it with lemon juice, cayenne and a bit of cream. Leave to set then top with strips of cuc. and a few chopped chives.

Favourite way to use smoked salmon?

Knew I could count on you lot for inspiration!

I ended up making a rather fancy lunch plate of hollowed out cucumber chunks stuffed with avocado creme fraiche mousse and topped with smoked salmon rosettes. Plus brown granary bread and more salmon on the side with lemon juice. Very moreish!

But you had so many great ideas I have put smoked salmon back on my next shopping list so I can try them all. So keep 'em coming!

Smoked Salmon

200g smoked salmon
100g cream cheese (I use Philadephia light - and they do a good one with chives in too)
1 tablespoon mayo
1 tablespoon lemon juice
black pepper
Capers (at least a tablespoon)

Whiz it all together in a processor or with a stick blender. Delicious.

This recipe was on Vi's Pantry a while back, its a members recipe (Feathers I think).

Anyway it also works with smoked trout too. And I think Sam did it in ramekins lined with smoked salmon.
