Mushroom Nut roast recipe

still trying my "at least one meat free dinner a week"

and i just had a thought about a mushroomy nut roast type recipe - i suppose a veggie meat loaf???

anyone got a nice tasty recipe? or recommend one?

I attended a cooking demo at Books for Cooks during which Celia Brooks Brown made this nut roast

I must admit that when I tried to recreate it it was not as nice as the one she made, but I don't think I followed the recipe very carefully.
Nut roasts are tricky. They can easily be too dry.

Mushroom Nut roast recipe

Cranberry, Chestnut & Mushroom Loaf. I make this one when my veggie niece visits. If you google that title it's the first recipe on the list - starts with 1 large leek and 1 large onion.

I like Nadine Abensur's recipes - I've got one of her books - but I noticed this recipe says it serves 12 - 16!!!

That would take a bit of adapting!

We have a lot of veggie meals. Tony loathes cooking and is so glad that I like it he'll eat whatever he's given.
