Sherry Mincemeat Cake

1)Does it need fed with more Sherry? 2)Instead of putting nuts on top, can I ice it, and can I ice it without marzipan if I brushed it with Apricot jam first?

I'm not familiar with the exact cake but I don't generally feed fruit cakes - I pour a little brandy or whatever over after the cake comes out of the oven but wouldn't add any more.

You can sugarpaste most cakes without marzipan, you probably won't get as smooth a finish and because the marzipan seals the cake in and prevents the colour of the fruit staining through to the icing it is best not to sugarpaste too long before your want to serve the cake - no more than a couple of days. Just brush the cake with apricot jam to stick the sugarpaste to it.
