Loaf Tin All in One Sponge

I need to make my son's character birthday cake in a loaf tin to get the right shape and want to make the all-in-one sponge. Should I be using twice the quantity for a normal sandwich tin (ie 4 eggs 220g flour etc) and how long do I cook it for?

What size is your loaf tin?

A 1 lb size takes a 4 oz mix - 4 oz each butter/sugar/flour/eggs. If its a 2 lb loaf tin you would obviously need double.

It's a 2lb loaf tin so double quantites then. Is the cooking time 45-50 mins at 180?

Loaf tin all in one sponge

Oven temps and timings are really tricky as every oven is different. I wouldn't cook cakes anywhere near as hot as 180C - usually 130 - 150, but if it works for you normally then go with it.

I tend to go by smell - when you start to smell the cake its nearly ready - I rarely time anything - sorry!

Birthday Cake Success!

Thanks for the advice. I used a 2lb loaf tin, uesd double the all-in-one sponge recipe and cooked it about 170 degrees until it smelt about right. It turned out great and tasted delicious. I then spent ages decorating it to make it look like Diesel 10 (known to real Thomas the Tank Engine fans) and my 4-yr old son thought his cake was great. Best of all so did his friends' mums!

About that recipe (as I am going to attempt tonight) how many eggs to 400g flour/sugar/butter?

All in one sponge

Equal weight eggs, flour, sugar.

6 - 7 eggs depending on size. Large eggs weigh 60g, I think.

Are you using one or two tins?
