lemon surprise pudding pg. 656

can anyone help me why my lemon surprise pudding will not separate with a sponge topping and runny base. It is not bad but not runny on the botton what do I do wrong. Very disapointing.

Which book is it in Gill? I'm wondering if you are using a fan oven in which case temperature usually needs to be reduced (by 10 or 20 degrees depending on your oven.) Delia's recipes are written for conventional ovens. May be totally wrong but worth a thought.

Lemon surprise pudding

It's in Complete Cookery Course, Liz, but it's very similar to the Hot Citrus Pudding which is on this site. I've made it several times and it does have the lemony sauce under the sponge so could be an idea to try that recipe, Gill. http://www.deliaonline.com/recipes/cuisine/european/english/hot-citrus-pudding.html

ah - i made this and no sauce, but i suspect my bowl was a bit big, so maybe that's an answer too? Surface area too big = dried up a bit...?

Lemon surprise pudding

I use skimmed milk do you think I should use whole milk. It is in Delia's complete cookery couse, but other cooks use this pudding beacause it is so great for children or even a dinner party etc.
