I have been making bread for a while, and its nice, but I've noticed it doesnt stay fresh for more than a day or so. Does anyone know of any natural preservatives, or is this just the way it is?

I too have made bread for quite some time. I think if you have a sizeable freezer it's about the only answer to your problem. I double wrap the bread so it won't get freezer burn, or pick up tastes. It wouldn't be in our freezer for more than a week or two, and we don't have a problem with the defrosted taste. But I do stress that it be double wrapped before popping it in the freezer.

Someone else may know of a preservative but hopefully this may help you until then. Good Luck.

I buy tubs of Vit C powder in Lakeland and in Holland & Barrett. The tubs last for ages as you need less than a teaspoon in a loaf. Just add it with the flour. BTW I notice that H & B have an offer on at the moment. It won't make your loaves last like bought ones but they'll be fine for 2-3 days. Also, the bread bags (two types) from Lakeland are very good.

I agree with ACDC. Fresh bread is better when newly made, unless you want to toast it. I always freeze in slices - well wrapped - and take out as much as is needed on the day. Because it is pre-sliced, it defrosts in no time.

Just a pinch? Would that be to the whole batch I'd make two 2lb pound loaves at a time. I must check H & B next time I venture out into the winter weather. Thanks in advance.

ACDC, I add a scant teaspoon of the powder to each loaf in my bread machine - that's 450g flour.

You really do not need very much. If making two loaves as you say, I'd prob add a fullish teaspoon of the stuff.

interesting - never heard of that. I make a littel loaf (350g) for us and it's usually gone in 2 days. Quite like the fact it has no preservatives in it! Means it's not full of rubbish
