Can anyone please tell me why pancakes are used to line the pastry when making a 'Wellington'. I'm making a venison one today and the pastry has to be lined with a herb pancake. I don't have any objections, I would just like to know if there is a reason other than taste. I must admit I haven't made a Wellington for years but I'm sure I never put a pancake in.

Not for me

I've used proscuitto around the mushroom duxelle before (or even liver pate) before putting the pastry on but I don't fancy a pancake at all!

Pancakes in Wellington Thanks

I made my venison 'Wellington' on Saturday and wrapped it in very fine herb pancakes and then pastry.I have to say it was delicious. The pancakes stopped the pastry going soggy and you really didn't notice that you were eating a pancake,you just got a herb taste. I will use this method again when I wrap things in pastry.Thank you to those of you that responded.
