In the Ingredients list for the above 60g quark is listed but is not mentioned in the Method. Is it just mashed into the potatoes please?

is listed as part of the topping, so I guess you would, flower. I've never used it myself.

Yes it is. Quark is a wonderful way to make low fat mash but still gives a lovely creamy taste to it.

I don't understand what McCain has to do with this recipe (as stated in the intro at the top). Is the quark McCain's?
