Delia'sRice Pudding

Hi, I am new to this forum & very much a cooking novice.

I have decided to make Delia's Old Fashioned Rice Pudding however I need a little advice.

Firstly, should I use salted or unsalted butter as the recipe just states butter.

Secondly, would ground nutmeg be ok instead of whole nutmeg.

Thirdly, I am going to do triple the portion in a casserole dish therefor will the cooking time be any different.

A warm welcome to Delia Online.

You can use either salted or unsalted butter. I like salted.

Ground spices can be quite dusty and they loose their pungency. If you buy whole nutmeg and grate your own it will always be better and will last ages. I would add here that Delia loves the pungent aroma of the nutmeg in her recipes but some members have told us they really don’t like it so unless you know how much you like nutmeg I would recommend you use less the first time you make it.

For the casserole it should cook in the same amount of time.
