Beetroot

I love beetroot and often boil it to eat cold with salads. I'd like to grate it raw too but do you peel the whole beet first or is it better to leave the the top and root to avoid an unnecessary mess? I'm not sure what causes a beetroot to bleed.

Grating beetroot

There's a recipe called Prickley Green Beetroot salad it's in my Vegetarian Kitchen book by Sarah Brown it uses raw beetroot and it doesn't say anything about peeling the beetroot so I would imagine you don't need to.
If you want to try this recipe just google it. Beetroot is one of my favourite things to eat especially if they are young and tender and freshly cooked, my OH hates them but I reckon if I made that recipe he might eat it as it sounds nice.

Beetroot

When you get those bags of ready prepared salad, the grated beetroot is crunchy like carrots & seems to have a drier, more brown end that suggests it has been washed but not peeled.

And I must admit, I've eaten it from salad bags but never thought to grate my own, raw, into salads. What a muppet!

When we grate raw beetroot we've always peeled it - the skin is tough!!
Then it just grates like carrot - just a bit messier!!

Beetroot.

to stop too much bleed from beetroot, leave at least an inch of "stalk" on top.

I would scrub them for using raw, with an old nail brush to get the ingrained soil off.

the i would chop into a size that my food processor can hand and grate using that.

or use disposable gloves - don't tell anyone that i dye my hair, but i really wash out the gloves that come in those boxes, and use them for cooking uses. and grate with a box grater, but, put a plate on top of your chopping board - esp if wooden.

Grating Raw Beetroot

I've since read that it's advisable to wear protective gloves! Thank you all for your replies. I shall peel the whole beetroot and then grate over a big plate!

Beetroot recipe

I made that Prickley green beetroot salad today and I did peel the beetroot because the skin looked a bit rough. The red dye washed off my hands easily so no problem. The OH ate it and he also had seconds , I had some and it was different, glad I got round to making it at last , not bad since I've only had the book for 30 years :0)
