Meringue help please!


Am a novice at this cooking malarkey but inspired and with Delia by my side am attempting to cook my favourite things...including meringue.

I've tried lemon meringue pie and just tried a pavlova. I use fresh egg and whisk the whites until I can hold the bowl over my head without a mess. When I whisk in the caster sugar it goes all sloppy - hard to make nice 'peaks'. I'm spooning it in and whisking it according to Delia's recipe...I think!

Any tips please!
