Truffle torte

I'm not sure whether it is Honey or Yummy that has made the truffle torte quite a few times but I would like to ask:

Can I use water or fruit juice instead of rum?

Can I use mascarpone instead of double cream?

The liquid glucose I know can be done in the m/w but is it 3 or 5 tablespoons of water to the equal amount of sugar and is it in the m/w until it boils or for a set amount of time?

I know the last para has been covered before and I apologise for bringing it up again. I did write it down but cannot lay my hands on it now.

Hi Wendy, Not sure about the mascarpone being used as a substitute for Double cream, but when I was in Brittany I couldn't get Double cream there either and used Creme Fraiche Liquide. As mascarpone is a little thicker could you let it down a bit with some milk I wonder ?
The Simple Syrup I used instead of the Glucose was 5tbsp each of sugar and water heated in the microwave until the sugar was dissolved, not boiled, allow to cool and then use as you would the glucose....any left over could be kept but tbh it is so simple and easy to do it's just as well to make fresh each time.
sorry I can't answer honestly about the cream as I haven't had the experience, if you do use it perhaps you could enlighten us all, these snippets of info are ideal for folk living outside the country x Good Luck x

Sorry forgot the first question !!
if the reason is you can't get it then flavour it with Brandy, or if you like to go down the Orange Chocolate route then use Orange flavour liqeuer. Not sure about the water as it might have a reaction with the chocolate and make it seize. Perhaps Lindsey will see this and give her expert advice.

Thanks for all your help and advice. I can get rum it's just that I don't like alcohol in anything and thought I could get away with water or juice. The idea that the chocolate would seize never ocurred to me. I will drop a line to Lindsey.
