Stacked wedding cake

I have to make a 3 tier stacked fruit cake, it will be covered with ready to roll icing but my worry is If I put it together at the venue the icing will have had time to dry and it may crack under the weight (obviously I will use dowels), or if it's stacked whilst the icing is still soft the bottom tier will have to take the weight for a lot longer. Any suggestions which would be safest?

If you use dowels I think you should be ok. You may also be able to tweak the decorations, if there has been any movement damage in transit, depending what you are putting on it? I always worry about leaving any celebration cake for kitchen or serving staff to display and/or tiers to stack, but at the end of the day, unless there is another cake decorator in the wedding party, most people won't notice any slight imperfections caused anyway - you will be the most critical person present I imagine! You could take a mini icing bag along just in case so you can do some fast repair work, but unless you have really fragile icing butterflies, sugar flowers or similar, you should be ok? It's a nervous time though & I really feel your anxiety - fingers crossed!
