Birthday cake

It depends on how you want to decorate it, but I tend to use Madeira because it is more dense & holds up the weight of the fondant etc better, & is therefore better for novelty shapes etc (as per the avatar of the minion cake in my profile). I would probably suggest you make the cake on Thursday ideally so you can decorate on Friday, but if it helps, have found that you can always make & freeze the uncut cake if you want to get ahead. Re design, as to size of cake required, I can't really help because I have never done a moto cross cake - I find google images really useful though! What I would say is to make at least a third as much cake said you think you need if you plan to cut shapes etc. you can always freeze the off cuts for trifles etc, or use them to make truffles.

Cake ... Correction

I mean a third more, because I always need more than I think once I start cutting, especially if the design is previously untested.

motorcross cake

Thank you for your reply which was most helpful. I ended up making 3 sponges in brownie tins and joining 1 and a 1/2 together and placing the bikes on a track on top it worked and everyone enjoyed.
