My sponge cakes, whilst generally turning out well, do tend to feel damp on top after cooling. Any ideas please?

Damp cakes

Assuming you cool them fully (until they are completely cold) without covering them & in a normal atmosphere, I'd have thought the cooking steam would evaporate, so I can only assume it's something to do with the recipe you are using. Does it happen with every cake you make or just a particular type? What is the recipe? Where in the world do you live? Is it very humid where you are?

Damp sponges

Just seen that you are in the UK.

Meant to say, the only cakes that I make that sometimes feel more 'damp' on top, are those which contain oil....

Damp sponges

Barbara, are you turning them out on a rack to cool or leaving them in the tin?
