Simnel Cake

I am going to make Delia's Simnel Cake (How to cook book 3) for our congregation after service on Mothering Sunday. My question is when would you make the cake for it to be eaten on 30 March?

Hello laurdan,

You can make it well ahead and freeze it or if you don’t want to freeze it I would say up to 3 weeks ahead if you keep it well wrapped.

Either way I would do the marzipan decoration up to 3 or 4 days ahead.

I would beg to differ. As it is a 'light' fruit cake I would make it as near the event as you can unless you are going to freeze it.
Remember when you put the marzipan in the centre of the cake (perhaps Delia mentions this - I haven't read her recipe) make the circle of marzipan smaller than the diameter of the tin so that it does not touch the sides, or it will burn.
