Basic Muffin cake recipe needed plse!

Hi! Very Happy New Year all firstly!

I am trying very hard to find a basic muffin recipe (that makes the large size muffins), to which I can make plain or add various other ingredients eg; choc chips, fruit etc.
I have searched for so long now and have been unsuccessful. I know it includes oil in the ingredients.
I hope someone can help with my query with a recipe with amounts and method etc and thank anyone in advance for any help given.

I'm not sure if this will help in any way but there is a site Muffin Recipes.co.uk. They have a variety of recipes divied into those with chocolate those with fruit, etc. I think there is a slight variation in the basic mix according to what you put in it although I have used the chocolate chip one a lot and have added my own variations without any problems.

Very Happy New Year too. HUGE thanks for that website, its brill and just what I was looking for. Unfortunately where on page 'How to make muffins'-it says "Here's a basic recipe and instructions on how to make muffins.
It's very easy! BUT then its blank! :-( But there are some gorgeous variations. Want to make the strawberries and cream after I have tried to guess how to make the basic without any added ingredients. I have never made them before you see.

I see what you mean about a blank page! As for a basic recipe I think the process of mixing all the wet ingredients (though why that includes the sugar, I don't know) then add the dry ingredients and mix until just blended seems to be the normal way.

For my own use, I can't get brown sugar easily so I just use white, I can't get vanilla extract but the baking powder is vanilla flavoured and although it states 150g choc chips, I put in what I've got - sultanas, walnuts, apples, etc - but not necessarily to the 150g stated.

brown sugar

Wendy, if you cannot get brown sugar can you get molasses/treacle?

You can substitute part of the sugar for molasses by weight and it'll do a similar result to brown sugar.

I am in the USA and I hate having to buy different kinds of sugar so I just do that myself.

Nate: I can't get treacle/molasses/golden syrup. One supermarket did get some Muscavado sugar, I bought a couple of packets but they haven't had any since. I can get Demerara but was told it's not so good to use in muffins as it doesn't always dissolve. I've not tried it so can't comment.

Adelaide, I should have mentioned that the mixture will look lumpy, that's how it's supposed to be, don't beat it until it's smooth!

Wendy if you are coming to the UK could you not get one of the family to order you the book from play.com or maybe amazon or I would hope that any good book shop will have the book. I've had my book awhile and use it often, it's got nice photos of all the muffins :o)

Adelaide if you do order this book I'm sure you will be very pleased with the many lovely muffin recipes. We always use play.com if possible, they are very efficient. Best wishes to you too :o)

I didn't read your post properly that he book was online. I have just had a cataract removed and as the new lens is for distance and my other eye has a cataract, too, reading small print at the moment is a bit hard. Sorry!

I will check play.com and look at what they have to offer.
