Oven temperature for Delia's Baked Vanilla Cheesecake

Oven temperature for Delia's Baked Vanilla Cheesecake

Hi there

I am all ready to make Delia's Baked Vanilla Cheesecake with caramel sauce from "Delia's Cakes" however I don't know what to do about the oven temperature.

The recipe states that the cheesecake should be baked for 55 minutes in an oven preheated at 150 degrees cent. However my oven is a range fan oven. Normally I reduce the temperature by 20 degrees but Delia's website indicates that when baking in a fan oven you should reduce temperature and time.

The book doesn't assist.

Can somebody please help by telling me at what temperature the cheesecake should be cooked and whether the time should be reduced? I was hoping to bake this for New Year's Eve but am now conscious that I have left it too late as can't have a practice.

Fan oven

Follow the instructions and reduce the temperature by 20 degrees, but do not turn your back on it; check as you approach the cooking time.

Thank you, that's really helpful. One other thing I forgot to mention was Delia says to leave the cake to cool in the oven once cooked. Should I keep the oven door shut during this time or open it to let the heat out?

If the recipe doesn't say to open the door then I wouldn't.
Another recipe I have says to leave in the oven with the door closed for an hour, then remove the cheesecake.

Someone else may know about this particular Delia recipe, but hope that's of some help.
