Can you substitute leaf Gelatine for powdered? If you can the recipe calls for 2 x 11g sachets of powdered so how many leaves would I use? In a panic as this terrine needs to chill for 10 hours and my guests are arriving for lunch tomorrow!

Hello Nicola,

You will need 7g of leaf gelatin or 4 sheets, each measuring about 11cm by 7.5cm.

Soften the gelatin in cold water for 5 minutes first then squeeze it to remove the excess water before you whisk it into the warm liquid.

I am puzzled about the advice that two sheets of gelatine are equivalent to 1 pkt of powdered gelatine. I had always assumed three and a half to four sheets of gelatine were equivalent to one packet of powdered gelatine depending on how firm you want the set.
I had also assumed that a recipe containing whole fruit required the greater amount.
Perhaps the recipe on the website for fruit terrine should be updated to accommodate sheet gelatine as it is so fail-safe compared with the powdered variety.

Lunch and the terrine were a success! I'm so pleased as it was a special lunch for my sister who has to have an operation and wont be mobile for a while. So Thank you very much.
Welshcookie, I substituted 3 sheets
for each sachet, just to be sure, and it was perfect. Thanks

Oh, I am so pleased. I have been worrying about this as two sheets per packet seemed too few.
