At some point I'd like to make Madhur Jaffrey's apple, peach and apricot chutney. The recipe calls for sour apples (baking apples) but I can't get any type of baking apple here so I was going to use eating apples. If I do should I decrease the amount of sugar a bit or add some lemon juice to maybe counteract the sweetness and lack of pectin or wouldn't it make a great deal of difference?

It uses 500g apples to 385g sugar plus the other fruits and liquid.
