Over-set marmalade

Over-set marmalade

I have a batch of marmalade (the slow-cook, foolproof recipe!) that set like toffee in the jars! Is there any way to rescue it?

Yes you can rescue it.

You can use apple juice or orange juice to reduce the set on the marmalade.
Apple juice will give a different taste , not unpleasant , just different.

Use the juice of one large orange for every 2 jars of marmalade , put it all back in a pan , add the juice , then bring to the boil.
Straight away hold the spoon over the pan , allow the marmalade to drop , this should start to set as the drops fall , or else , use the saucer test.
It should set straight away.
You can also use orange juice from a carton , about 2 to 3 fluid ounces per jar.
Remember to sterilise the jars again.

Thanks - I thought that might be a possibility, but I didn't want to risk it without asking. It might be difficult to get it out of the jars, but it's worth a try.

Stand the jars in some very hot water for 5 mins , the marmalade will slide out .
