eggs

I am making a 10" wedding cake from Delia's Book of Cakes (original and much sellotaped book). I only have large eggs from Tesco's. How many large eggs are equal to 8 standard eggs. I believe that DS uses standard eggs in her books.

She repeatedly says on this board that Delia uses large eggs. It is easy enough to Google to find out how many medium eggs equal a quantity of large or extra large or even small.
You can always add a bit of juice or milk to a rich fruit cake if you think you need it to get the correct consistency.

I think many moons ago, recipes books often said, assume that the eggs we've used are medium. Delia's very early books may have said the same, I don't know. But by the time we got to the 90's eggs were numbered and Delia would say she always used large eggs... Size 1 (70g or over) or 2 (65g - 70g). Standard weight between 60 - 65g and medium were 50 - 55g. Eggs seem to be smaller these days and so if you're using an old recipe, I would weigh the eggs. But for a fruit cake you want a dropping consistency that when you gently shake your wooden spoon, the mixture drops off into the bowl. You can always add a drop of milk if it doesn't.

I think for Delia's new Cookery School she always uses large (I think because generally, eggs are smaller than they used to be)... but those recipes have been designed for large eggs. So I think I would ask Lindsey in the Ask Lindsey forum on here, she may be able to give you an easy solution.
