Failed ginger cake

Just made a ginger cake--complete disaster !! Measured syrup and treacle incorrectly What is the best way to measure these ingredients when they are given in ounces(weight) ?

Weighing syrup

I have balance scales so I put on one side the weight I want. Then I add weights or a jug of water until the scales balance with the syrup tin on the other side.
I then remove the weights which equal the weight of syrup I need for the cake. Place a tablespoon in a jug of boiling water and spoon out syrup from the tin until the scales balance.

That takes far longer to write than do!

With modern scales, just remove the weight you require until the weight has gone down by the amount you need. That is put the tin on the scales and if you need, say 8 oz, remove enough syrup so the weight shown is 8oz less.

My goodness Welshcookie... I have balance scales too and I've had to read that about three times before I understood your first paragraph!! :o) I think I'll take a look at that video.

Well, I've looked at the video and Delia doesn't give the method for balance scales, only electronic scales.

True, but fortunately I have both... horses for courses as they say.

I tend to just use a tablespoon and the best tip I can endorse is warming it in a jug of hot water first. It certainly makes it much easier to clean the spoon.

Weighing syrup

I just found this on the Tate and Lyle Site.

'The easiest way is to use a tablespoon. 1 tablespoon = 1 oz or 25g. Alternatively put the tin on weighing scales without its lid, note the total weight and spoon out Lyle's Golden Syrup until you have reduced the total weight by the designated amount.'
