last minute fruit cake?

hi,
i have only recently set up my own cake business and as yet have never tried to make a fruit cake. I have just gotten a call from a friend of a friend who needs a 10" square fruit cake for WEDNESDAY!!! from what i do know about these cakes, they need to be fed over a period of time and should be covered with marzipan before fondat. The client needs it too soon to feed it, it has to be delivered 140 miles away by half past 7 on wednesday, she also wants no alcohol in it, no nuts because of an allergy, therefor, no marzipan! Will it taste ok being eaten so soon? can i soak the fruit in orange juice and what do i put under the fondant to stop discoloration and bumps?

Fruit cake

A fruit cake is mainly dried fruit stuck together with cake mixture. You can certainly leave out nuts.
You can use fruit juice instead of alcohol.
It does not need to be fed.

Ready made fondant. Put some redcurrant jelly or sieved apricot jam under it.

The friend of a friend has rather left it until the last minute so I hope you charge her full whack, including petrol and meals when away from home.

It will be fine.

Last minute fruit cake

Hope this isn't too late, but for a quick moist fruit cake you can do no better than a Marmalade cake, there's a recipe on my profile, just click on my name below the avatar. You can use vodka to stick the marzipan onto the cake, which will also do a bit of preserving, but if she wants it to use quickly (as it would appear) then I wouldn't bother. Good Luck.

Sadly, no nuts, no marzipan. Home-made marzipan is sometimes the best bit of a fruit cake!

You can still use the Vodka to stick the fondant to the cake.....did she give you an idea on how long before making and eating ?? Obviously this will be a deciding factor to hat you need to do .
