Old fashioned baking

Hi all,

I'm trying to do a project on reviving some old fashioned British baking. I have the basics from my family like fruit or Dundee cake etc but I am interested in hearing what other people remember from their childhoods.

I would love to get some real traditional British "old favorites" and anything regional would be great!

Go on, take a trip down memory lane :)

Old Fashioned Baking

Baking days to me remind me of Mum making a large batch of pastry and we would have , Egg Custard Tart, Bakewell Tart, and a large Eccles Cake to come home to after school.
She rarely made cakes, but Sundays we would have a steamed Sponge Pudding with either jam or syrup in the bottom.
Strangely she never weighed anything out on scales, always used tablespoons and one spoon in particular was always kept for this purpose, margarine was just cut from the block and never weighed either, in fact I don't think she owned a set of scales !!

Victoria Sandwich Cake

Notice few of those had much dried fruit in them. Dried fruit and cherries were considered a bit of a luxury after the war (expensive). Fruit cakes were for Christmas. Pastry was cheap to make (fat and flour) and so mothers made a lot of tarts. Victoria Sandwich Cake was for Sunday tea. If the budget allowed, they might add a tablespoon of cocoa to the Victoria Sandwich mixture and add some cocoa to a butter icing and call it a chocolate cake. The chocolate cakes were nothing like the recipes of today where you need several bars of dark chocolate.

Chocolate Cake

I remember my friends mother use to make a chocolate cake which was out of this world. or( so I thought at the time) I seem to remember she used a basic victoria sponge mix but included 2 tbls spoons of best cocoa powder to the mix and the same to the butter cream filling. I might just make one to see if it still tastes as good as I remember.

That's funny because it was my bestfriend's mum who an excellent baker (better than my mum) and she used to add the cocoa (not sure how much to be honest). But I do know that however much cocoa she added, she would leave out the same amount of flour so that it wasn't dry. She would always bake a Lemon Meringue Pie (my favourite) for Sunday tea and I was often invited to stay.
