Rack of lamb

I have 14 racks of lamb to cook - I need to pan fry them before cooking in the oven.

Can I pan fry several hours in advance? If so, should I place in the fridge until cooking in the oven or can I leave a room temperature (I have a fairly cool room),

Hello Amanda,

Yes you can brown the meat in advance and if your room is cool I would say they can be kept there for up to 2 hours before you cook them. Any longer than that they should be refrigerated.

I can confirm that yes, you can brown prior to cooking just like lindsay says.

I do it many times for beef, for making beef welly boots.

But i would put in the fridge once the initial browning has cooled down.
