Fan oven

Hello, I have had my fan oven for 10 years and since thie very beginning of our relationship I've never had any confidence that my cakes will turn out well. It is a well known, fairly expensive make. I never had this trouble with my gas oven, I've tried multiple variations in timing and temperature over the years but nothing appears to be a reliably constant setting. I'm thinking of buying another oven. What do 'real' cooks recommend. Any recommendations would be gratefully received.

Fan oven

Hello Narintip!
This subject has already been recently covered. I would recommend an oven giving both conventional and fan assisted cooking.
I never use the fan for cakes. All that 'wind' blowing around the oven won't help your cakes rise, especially sponges.
Took me a while to make that discovery but all is now fine with my baking.
I've had a Neff double oven for some years and the top oven-cum-grill, which is conventional only, is ideal for scones and biscuits and even heavy fruit cakes.
Good luck.

If you look at the 'Equipment' thread there is a discussion headed 'Cooking cakes in Fan Ovens' which might help you.
