Pasta recipes for lunch

My son (19) is trying to put weight on and has decided to pasta to work for lunch instead of sandwiches.

I have made chicken ceaser and spag bol but I am struggling with ideas as to what else to make, maybe something with cold sausages?

Does anyone have any ideas please?

Pasta recipes

Just cut up some cocktail sausages or hot dog sausages.... If he wants to heat his meal up then they should heat up very well in a short space of time, or will still taste edible cold. Add some cherry tomatoes too.

As an alternative cut up chunks of cheddar cheese and spring onions add to the cooked pasta, again with cherry tomatoes, the cheese will be an added fat if he is wanting to put on weight, and can be microwaved until melted.

Use feta cheese and a drizzle of olive oil. Ad olives, and a pinch of oregano add sun dried tomatoes in olive oil, for a mediteranean taste.

pasta lunches


roast some veggies, like aubergine, courgette, mix of peppers, tomatoes, onions, for 20 mins on 180c. peel the peppers and chop everything to nibble size and stir through some cooked and cooled pasta - with all the lovely veggies juices. will keep in fridge for 3 days, you could add on the day in a little take to work lunch box some torn up mozarella or feta or ther grated cheese, with maybe a drizzle of olive oil, he can take a frozen bread roll with him too to mop juices up with as by the time lunch time comes roll will be defrosted.

similar can be made with rice cooked and cooled - but i would only eat after proper chilling for no more than 2 lunches.

ps...

to both ideas i suggested you could add leftover chicken, pork, beef, sausage, bacon, cut into slithers etc.

or add a chicken drumstick or couple of wings.
