Football Pitch Cake

Hi
Can anyone give me a sponge recipe for a cake tin 10ins x 24ins. I am making a football pitch for my grandson and not sure how much cake mixture to make.
Thanks Lucia

Football pitch cake

I would make a standard Madeira cake (because if you want to cut or shape a cake, then a dense texture works best). I would see what size that recipe makes, then work out roughly what quantity you need. My kids always demanded that I make it chocolate flavour, but if you substitute some flour for cocoa, add more baking powder.

At a guess, I would say that you would need the equivalent of 3 (or even 4) x standard Victoria sandwich recipe to fill a roasting tin of the size you describe, depending how thick you want it. In my experience, you are better having too much cake than not enough & you can save the off cuts to make truffles - freeze if you don't want to make them straight away.

You will need enough mixture for either a 10 inch square cake times 2 or a 12 inch square cake times 2.

Bake in two tins or the same tin twice and ice over the join when you do the line markings.

A firm Madeira cake will be best.
