Paella and Risotto

I've never made a paella. Can anyone please tell me what the main difference is between them?

Paellla/risotto

Paella rice is different to risotto rice. Just follow the instructions on the packets. I made risotto yesterday, using carnaroli rice; arboria also suitable for risotto.

Risotto and Paella

Thanks Gerry. I've used both types of rice for risotto which I make quite often. What I'm wondering is: how does Paella differ. Is it the finished texture?

Sorry, EG, didn't understand. Have paella rice in kitchen, waiting to use it. You've inspired me and I'll decide on other ingredients and use it tomorrow.

Risotto - Gerry

Well I've now done a bit of research on the computer. A finished paella should not be creamy, unlike risotto, and for this reason should under no circumstances be stirred too much while it's cooking. Would love to know how yours turns out, Gerry.

Thanks for advice. I think we're going to prefer the risotto.

Spot on EG, a Paella is 'drier' when finished. Personally I prefer the drier texture than the creamy more sloppy finish. Hope it turns out successfully.
