Toffee pecan sauce

I want to make Delia's toffee pecan sauce and I'm going to use white sugar as the soft brown sugars of every type are unavailable. I thought I would use some coffee to give it a bit of colour. Do you think instant coffee powder or liquid espresso would be the best?

Hi Wendy,

You could make your white sugar into dark caramel and use it instead of the brown sugar in the sauce.
