Please can anyone tell me why my scones don't rise well .over the years I have tried every recipe going still no good. I am quite a good pastry and cake bakerwhere could I be going wrong?

I find the secret is not to handle the dough too much - in fact the quicker you mix all the ingredients and then bring them all together, the better. Also, don't twist the cutter - straight down and up! If you have all the right ingredients (I can't get buttermilk so use natural yoghurt) you should be OK. Happy baking.

I used to have that problem too until someone recommended I use strong plain flour, the type for making bread. Never been a problem since!

I use a Rachel Allen recipe with plain flour - not strong.

Works fine for me. The trick is to work fast and gently once you add the liquid.

i have a scone recipe in my profile, which is lovely, and the secret is like others have said, do not handle the dough too much and don;t use the twist action on your dough cutter pull excess dough from the outer edges and re shape gently.
