Help - I have just made some marmalade and it hasn't set. I followed the instructions and did the "wrinkle test", but after extra cooking (almost double the time suggested) it has not set. Is there anything I can do to save the situation?

That really is strange , but it will be ok.
Use the juice of a lemon for each pound of sugar that you put in.
Bring to the boil , it will then set very fast.


Let it boil just for a minute or two , then , dip the spoon in , quick stir , then lift the spoon up holding it over the pot ,if you see the last few drops start to set you are home & dry.
Make sure if you are doing a saucer test that they are ice cold , I preferred to leave them in the freezer overnight when I used to use that system.

Thank you Anastasia, that sounds simple enough. I will have to wait to get to the shops to buy lemons and will give it a try.
