Crumbly cakes

Can anyone tell me why the middle of my cakes crumble when cut? I made Delia's apple cake and it was lovely apart being crumbly. What Have I done wrong?

I sometimes have the same problem and would be interested to see how to resolve it and what causes it.

Crumbly cakes

Is this all cakes or perhaps just fruit cakes?

This may sound a daft question, but what kind of knife do you use to cut your cakes? I've found that a knife with a pointed end and a large serration helps to saw the cake. If you press down in the middle as you cut, this can cause them to crumble.

The only other thing that springs to mind... have you cooked it longer than you need to? I like my cakes to be moist and so try not to overcook them. I tend to do them for less time that the recipe says (but that might just be my oven).
